Cherry Leaf Cheese Cake
"Sakuramochi" is a seasonal Japanese delicacy that I'm very fond of. It's made with cherry leaves wrapped around a generally sweet sort of bean paste cake, but it's the leaves themselves that are the dogs bollocks. Not flowers, but leaves from the cherry tree, pickled in brine! This might sound awful and there is certainly nothing like it that I can think of in Europe (Turkish delight with a pinch of salt?), but the saltiness adds a very interesting tone both to the flowery flavor of the leaf itself and to the cake, which would otherwise be rather bland.
Anyway, I wanted to try something different with these leaves and made a cheese cake (above).
